Summer Shrimp Cocktail w/ Knorr

Summer calls for crisp and cool recipes that can be made quickly and enjoyed slowly and immensely. This weekend the temperature was over 100 degrees and as we decided what to make for an early Sunday dinner, I wanted something really refreshing, crisp and full of crunch, and I totally had a craving for a shrimp cocktail. Shrimp cocktail is pricey to have out and that's why we like to make ours at home where it's going to cost a lot less and where we get to add all of the ingredients we want into it. I love adding a lot of cucumber, chile serrano and even onion into the mix, and if we make it at home I can top it with as much avocado as I want. You know restaurants are really stingy when it comes to their avocados and at home I can add as much as I want of everything. 


Enjoying that Shrimp Cocktail at home is also a good way for us to end the weekend by preparing a meal together and sitting down to enjoy it without a lot of fuss. I find that most times when we are out Sunday night it can be super hard to get up and be ready to go on Monday, so a night in enjoying a nice dinner at home and watching a movie is definitely the way to go. 


How delicious and refreshing does this look for a hot Sunday evening? And you know me, I don't make anything that takes too long or too many ingredients. I like to spend as little time as I can preparing a meal so I can spend that time, enjoying it instead. 


Summer Shrimp Cocktail w/ Knorr
1lb uncooked shrimp
1 cube Knorr Caldo de Tomate Bouillon
1 1/2 cups of tomato juice
2 celery stalks chopped
1 large cucumber chopped
2 medium tomatoes chopped
1-2 chile serrano chopped
1/2 onion chopped
1/2 onion whole
3 avocados chopped
2 garlic cloved whole
1 lime


I don't like it when the shrimp in a shrimp cocktail is flavorless and that's why I love using a cube Knorr Caldo de Tomate Bouillon. I simply add a cube to the water before adding the raw shrimp and it gives the shrimp the most delicious flavor, you might even want to eat the shrimp alone when it's so good.  


Cook shrimp:
Fill pot with 4 cups of water, add 1/2 onion, 2 garlic cloves and 1 cube of Knorr Caldo de Tomate Bouillon. Wait until water boils and add 1 pound uncooked, clean shrimp into boiling water. Cook about 5 minutes or until pink.


Prepare cocktail:
Add 1 1/2 cups of tomato juice to a large dish. Add chopped tomato, cucumber, chile serrano, onion, and celery. Top with the juice of one lime. Mix well and cool in fridge until ready to serve. 


Plate:
Fill goblet (purchased at Walmart) midway with the cooled cocktail and place shrimp on the border of the cup. Top with extra avocados, serve with saltine crackers. ENJOY!


Yummy! The addition of chile serrano and onion, plus Knorr really give our shrimp cocktail a Mexican kick and tons of flavor. It's SO good you might have to make extra. My girls supposedly don't like shrimp, but when we make this they all "forget" and are suddenly eating large bowls of shrimp cocktail. 


I told you that Knorr is one of my secret weapons in the kitchen for adding extra flavor to my dishes and it really is so versatile. Find the entire selection of Knorr products at your local Walmart and use them to help you come up with some really tasty, yet easy meals. 


Yesterday my family and I sat down to big cups of the most delicious Shrimp Cocktail and brownies afterward. It was a nice way to end the weekend and to share some quality time together.
