It's only two weeks until the beginning of the new school year and at my house we are already preparing for the onslaught of fall and everything that comes with the kids going back to school. The back-to-school season really is the busiest for us, especially this year because we will have a Kindergartener that needs extra drop offs and pickups, and one of the girls is starting her first year of college. It's literally going to be an insane asylum here for the next few months and I am doing my best to plan ahead so that I can try to get ahead of some of the chaos. 


One of the areas where I always try to save time during the back-to-school season is in the kitchen. Everyone gets home at a different time and I don't want to find myself in the kitchen all day. What I need to plan for are easy, low-ingredient meals that can be prepared in minutes. Planning ahead includes stopping by Walmart to stock up on Campbell's products so I can have ingredients at-the-ready for these easy meals: Pace Salsa, Prego Italian Sauce, Campbell’s Chicken Noodle Soup and V8 + Energy. One of our favorite lunches is Campbell’s Chicken Noodle Soup and a sandwich, but not just a regular one. I like to put my own spin on these to give them a spicy kick and a lot more flavor, which makes it feel more like we're having a meal and not just a snack. Plus everything in life should have some spice to it, don't you think?


Quickie Chicken Noodle Soup & Grilled Cheese



Ingredients for one person:
1 can of Campbell’s Chicken Noodle Soup
5 tbsp of Pace Salsa
1/2 diced avocado
Prepare: Heat the Campbell’s Chicken Noodle Soup the same way as usual but also mix in 3 tablespoons of Pace Sauce to add spice and kick up the flavor. Top with a spoonful of Pace Sauce and avocado. When constructing the grilled cheese add two spoonfuls of Pace Sauce. 


Voila! Now we have taken regular Campbell’s Chicken Noodle Soup and given it some Latino flavor, just by adding the spiciness and yummy flavor of Pace Sauce and avocado. 


This is a hearty lunch that will satisfy the hungry monster inside and it only takes minutes to prepare. That way I can pop into the kitchen for just a few minutes as everyone arrives from school and make them their own serving without a lot of hassle. Easy-peasy but yummy. 


Campbell’s Chicken Noodle Soup is a traditional family favorite and I love how easy it is to make it your own just by adding a few ingredients. It's definitely something I always stock up on at Walmart. Don't forget to print your coupons for your next grocery run and stock up so you too can be ready to face the back-to-school season.
