As you might notice if you take a look at most of the recipes I share, I am not a big meat eater. I do love the occasional cheeseburger, steak or ribs, but for the most part my daily diet consists of very little meat. But I grew up eating food made by one of the best cooks in the world, my mom, and her food always had/has a lot of meat, flavor and just simple goodness. So how does one achieve that same level of flavor and goodness without meat? For me it has a lot to do with queso. I could literally eat cheese and bread for the rest of my life and live very happy until my last days. Specifically I have a love for Mexican queso fresco and queso cotija which are two of the most flavorful cheeses known to man and adding them to any savory dish really does deliver that flavor I remember from my childhood. I also really, really love carbs, so anytime we can get some queso and carbs going, well that is a good day for me.
Today I want to share one of my little treat meals that's basically: tortillas, queso and aguacate, all things at the top of my food chain and so good. In other words it's heaven in a bowl called Tortilla Soup.
Oh yeah...that's the good stuff.
Tortilla Soup
(serves 4)
1 cube Knorr Caldo de Tomate Bouillon
10 tortillas
4 tomatoes sliced in half
1 garlic clove
1/4 onion sliced in half
3 avocados
1/2 cup queso cotija
2 chipotle peppers
1/4 cup of oil
2 cup of water
pinch of salt
Directions:
Tortillas- Let's start by slicing the tortillas into shreds. Add oil to a frying pan and toss in 1/2 of the tortillas, we will be frying these in two batches. Add a pinch of salt to the tortillas and keep stirring for an even fry. Once each batch is fried evenly take out and put to cool and drain on top of a plate with paper towels.
Caldo- Place into blender: tomato, onion, garlic, and chipotle peppers, 4 cups of water, 1 cube Knorr Caldo de Tomate Bouillon and blend until smooth. Add 2 tablespoons of oil into a medium sauce pan and heat for 2 minutes, add contents of blender and cook until boiling.
Now let's get each bow of tortilla soup served up shall we? Start by adding a nice helping of the fried tortillas to the bowl. Top generously with queso cotija.
Now add a nice helping of diced avocados, the more generous the better.
Now add the caldo and of course top with some more queso cotija. Serve hot and enjoy.
What really gives this tortilla soup great flavor is the blend of Knorr and chipotle peppers. They give it that spicy full of flavor kick that tastes like a lot of the meals I had growing up. Plus the crunch of the tortillas that are on top of the caldo adds an extra element, I like adding extra tortillas on top to keep it really crunchy.
This is the perfect meal to enjoy with the kids while catching up on the long week. Summer's been crazy busy and we don't always have time to sit together for a meal, but when we do we definitely enjoy it.
