In a few weeks my family and friends will get together to enjoy the biggest game of the football season. This is always one of the most fun days of the year. As usual one of the best parts of the day is all of the food that we get to eat. My mom and girls are huge meat eaters, so everyone always looks forward to carne asada with all the fixings. I'm not the biggest meat eater and always look forward to something light and fresh. Recently I have become a fan of shrimp because it's so versatile and you can cook up a variety of dishes much faster. For game day I am going to make Shrimp Tacos with Chipotle sauce.
Last time I shared a shrimp dish we cooked the shrimp from scratch, but let me tell you that the whole deveining thing was not my favorite. This time I picked up a bag of pre-cooked shrimp that made the whole job a lot easier. When it comes to cooking anything, I need it to be quick, especially when family is going to be over and we are going to be watching the big football game. Like, who wants to spend their time in the kitchen slaving away? Not me.
Here is my take on Shrimp Tacos with Chipotle Sauce:
yield 6 large tacos 10 small
Shrimp:
1pound precooked shrimp
1 garlic clove
2 tablespoons diced onion
1 cup diced tomato
pinch of cilantro
2 tablespoons of olive oil
dash of salt & pepper
Shrimp prep:
Preheat pan over medium heat. Add olive oil into pan and add onions until slightly caramelized. Add tomato, garlic, salt, pepper and shrimp and sauté for 3-4 minutes. During the last minute add cilantro. Place shrimp in bowl to prep tacos.
Chipotle Sauce:
2 tablespoons of sour cream
2 tablespoons of mayo
1 teaspoon of lime juice
pinch of salt
1 blended 7oz can of La Morena Chipotle Sauce
Mix all ingredients in a bowl and chill in fridge until ready to serve.

For the potluck I will serve these on small tortillas but on regular days I love using the large corn ones from Cardenas. This is the best tortilla in the world! I lay the shrimp on a bed of shredded cabbage, add some tomatoes, avocado and a few slices of lime. The star of the show and what makes this taco delicious is the huge dollop of Chipotle Sauce on top. We kept the freshness of the sour cream and mayo but have added spice and Mexican sabor with La Morena Chipotle Sauce.

I've lived in Southern California all my life, fish and shrimp tacos are a staple here. By adding ingredients like cilantro to the shrimp and La Morena Chipotle Sauce to the sauce, I give these tacos the Mexican flavor that comes from my heritage.
