I am a big fan of paletas de agua during the hot summer months, but it's always been a challenge to find a good paleta mold that makes it easy and mess-free. Paletas de Mango Con Chile:
1 cups of Dole Pineapple Orange Juice
1 cup of Dole Mango Chunks
1/4 chili fruit powder
I usually don't have a lot of time to get these done, so my thing is to get them in the freezer as quickly as possible. I cut the large mango chunks into 2 pieces, leaving them large enough to enjoy but small
enough to fit into the container. Now I sprinkle some chili powder into each paleta slot, I use extra because we like ours really spicy. Now fill halfway with juice. Add chunks of mango and fill with more juice. Once again I sprinkle some more chili powder and top. Add palette sticks and these are ready to go into the freezer for 4 hours.
See those big, chunky pieces of mango? Those are the best parts about biting into one of these paletas. It's like a Mangoneada on a stick and they are so easy to make that there is just no excuse no to have them a few times a week. And now with my new paleta mold I can make all kinds of paletas including some that the kids will love. No more having to pay the paletero man over $1.50 per paleta and that's without them having any real fruit. Today I am thinking of making Dark Sweet Cherry paletas with vanilla ice-cream (just blend), doesn't that flavor combo sound amazing?
