I am a sweet & savory kind of gal, always have been. So it comes as no surprise that I always want to add sweetness to my savory meals and vice versa, but not everyone in the family is a fan. That's why one of my causes of life is to change their mind, so I am constantly working out little recipes that will show them just how good, sweet, savory and spicy can work together. Today I think I finally did it. Whoop! Today I made one of the simplest little treats that I have ever made, and everyone agreed that it was "not bad". I think it was totally excellent!!!!


For my recipe I went back to Walmart to grab a package of Farmland® bacon which is slow smoked over real wood for maximum flavor. For decades, Farmland® has taken pride in perfecting their curing and smoking technique – a difference you’ll taste in every delicious bite. I love bacon and I am one of those people that thinks bacon makes everything better! 


Farmland® bacon has that yummy smoked flavor, I wanted to use that flavor to make something extra delicious. I looked around the produce section and what caught my eye was the pile of fresh pineapples that had just arrived. I immediately though, pina y bacon and as I turned it around in my head I though of honey!! And of course to balance the smokiness of the bacon, the tart of the pina and the sweetness of the pineapple, some chilito en polvo would be perfect. I grabbed my goodies and ran out to make my girls their treat. 


I am always very open about my lack of expertise in the kitchen, and how simple is always best for me. But simple does not have to mean flavorless, verdad? And when you are working with Farmland® bacon, there is going to be plenty of sabor. 

Pineapple & Bacon Poppers
1 package of Farmland® bacon
1/2 pineapple (fresh is best but canned will work)
1/4 honey
1 tbsp chili pepper

Directions:
Set your bacon slices on a cookie tray in the oven for 10 minutes. Start checking the bacon around the 7th minute so that it's not overdone. If the bacon is too cripsy it will break when you're plating. While your bacon is cooking, start peeling your pineapple and cut into squares, thiner than mine will work better. In a bowl mix honey and chili powder and set aside. Once bacon is ready pull out of the oven and while it's hot slice into squares of the same size as the pineapples, letting it cool before the next step. Now all you do is plate adding a piece of pineapple and bacon to each toothpick. When you are done putting them together drizzle your honey mixture liberally over the finished poppers. If your family likes extra spicy, you can sprinkle with more chili powder on top. 


So good!!! I love the marriage of these flavors and textures together. It is the perfect mix of savory and sweet.
