The memories that really stand out of my childhood all have to do with food. My mom has always been the best cook, not a trait that was passed down to me unfortunately. Back in those days, we didn't have a lot of money and our pantry was not fully stocked like it is now and yet it still amazes me how she could turn three random items from the fridge and pantry into a meal. We might not have had a lot of food to work with, but my mom always made something delicious. 

Since I lack my mothers talent in the kitchen, it is not as easy for me to go in there and make the same kind of amazing dishes as she did. But I try, especially when I am the only one home and I have to come up with something quick. When I am having a really busy day, the last thing I want to do is leave the house for lunch, so I pop down to the kitchen and look through my cupboards which are filled with foods that Sammy loves. 


I'd actually just stocked up last week on a trip to Albertsons where I picked up her favorite Kraft Macaroni & Cheese. She lives on this stuff! And I like it just fine, but to tell you the truth, I enjoy a little more spice in my meals. And if it's going to be a meal for one then I can have my Macaroni & Cheese a el estilo Mexicano


For today's recipe, I am going to share how you can take the kids Kraft Macaroni & Cheese box and turn it into a grown up meal. All I did was follow my moms rule that anything can be made into a meal by adding: cebollas (onions), chiles verdes (serrano chile peppers), and tomate (tomato). 


Macaroni Salad a la Mexicana

1 box Kraft Macaroni & Cheese
1 1/2 tbsp KRAFT Mayo
Pinch of Salt
Pinch of Pepper
2 Chile Serrano Peppers Diced
1 Medium Tomato Diced
1/4 of an Onion Diced
1 Slice KRAFT Natural Cheddar Cheese


Instructions:

Pour box of Kraft Macaroni & Cheese and boil for 8-10 minutes. Drain and add mayo, salt and pepper. Now you can fold in your serrano peppers, tomato and onions. Allow salad to cool in the fridge for at least 15 minutes. Sprinkle cheddar cheese on top and serve with a side of tortilla chips. 


One things for sure, this is NOT the kids Mac & Cheese! This is a crunchy, spicy and yummy salad that you can make and enjoy in about 30 minutes. With all the spice and crunch I get rid of the blah from my day and am re-energized to keep going. 


My mama taught me how to think out of the box and this lunch is a perfect example of how you can take items already in your pantry and turn them into something totally unexpected.
