I love the holiday season! It's a time to get together with friends and family, to celebrate the season and to celebrate the end of another year together. One of the best parts of the holiday season has to be the food and though I personally am not the best cook, I really enjoy working on those simpler dishes that I have been making since my girls were little. When we sit down to eat this holiday season, the table will be filled with my moms traditional dishes from Mexico, my now grown daughter's traditional dishes from the US, and with my dishes which usually are a mix of both of our cultures mixed together. 


One of my favorite dishes to enjoy during the holidays has to be deviled eggs, which are right up my alley because they are super easy to make and don't take a lot of cooking talent. I didn't have deviled eggs for the first time until I was in my twenties, it wasn't a dish my mom made so I'd never had them. But since having them that day, at my ex husbands family get together, they became one of my favorite dishes. Now when I make them for my family, I like to give them a little bit of a spin to give them that spicy, smoky flavor we love.

Holiday Chipotle Deviled Eggs 
(yields 12)
6 eggs
4 tablespoons mayo
2 tablespoons yellow mustard
2 tablespoons chopped onion
2 tablespoons La Morena ® Chipotle Peppers in Adobe Sauce
salt and pepper to taste
chopped scallions 

  • Boil eggs for about ten minutes
  • Allow eggs to cool completely
  • Peel eggs and slice in half lengthwise
  • Remove egg yolks and place in a medium bowl
  • Place sliced egg whites on serving plate
  • Mash egg yolks into a fine crumble using a fork and add: mayo, mustard, onion and chipotle and mix together
  • Disperse yolk mixture on top of egg whites and top with chopped scallions
  • Refrigerate and serve cold

These deviled eggs are so delicious! They have the added crunch of onion and the spicy and smoky flavor of the La Morena ® Chipotle Peppers. And, while they have a little bit of added spice, they are not too spicy for the entire family to enjoy, including the kids.
