Lent is a time of abstinence but that doesn't have to mean deprivation, especially when there are so many delicious seafood dishes that you can prepare. Mexican food is so flexible, there are so many dishes that incorporate fish and veggies, perfect for la cuaresma. Today I am going to share a recipe that we love at my house, using fresh shrimp, veggies and Knorr® bouillon cubes from Northgate Market.
No se te hace agua la boca? Me yes, I am not a big meat eater to begin with so anytime that we are talking veggies, and shrimp, I am SO there! Plus this is such an easy and quick recipe to prepare, you know how busy I am and the last thing I want to do is spend my day in the kitchen. You will love how easy this is to prepare even when you've had a long day!
This is only the second time I shop at Northgate Market because there isn't one super close to me. However, we were in L.A. yesterday and there are a few on the way home so we took advantage of stopping by and getting the ingredients for this recipe. I love how many authentic Mexican foods Northgate has: everything from warm tortillas, flan, to pan dulce...you name it, they have it.

Shrimp & Veggie Kabobs (serves 4)
1 pound of shrimp
2 yellow pepper diced into 1inch pieces
2 red pepper diced into 1inch pieces
2 orange pepper diced into 1inch pieces
1/2 onion diced into 1inch pieces
1/2 can of pineapple rings diced into 1inch pieces
1 cube of Knorr® Shrimp Flavor
2 minced garlic cloves
2 tablespoon seasoning juice
1 lemon squeezed
1 tablespoon olive oil
1 tablespoon
salt and pepper
Preparation:
1. Devein and clean shrimp.
2. Mix lemon juice, olive oil, seasoning juice, garlic, pepper and salt in large bowl.
3. Drop shrimp into the marinade before placing onto kabobs for a quick marinade.
4. Put kabos together and grill for 6-8 minutes turning every few minutes. Upon placing them on grill I like to brush some marinade on for extra flavor.
5. Remove from grill and serve hot.
These kabobs are so juicy, the veggies still crisp but full of sabor and seriously, so easy to make. Northgate Market also has shrimp that is pre-cooked and cleaned, which will make prep a lot easier. I suggest picking up a few pounds and having some ready along with Knorr® bouillon cubes to last through cuaresma. A spoonful of Knorr® can make your meal something special with delicious flavor everyone will enjoy.
