Mole Enchiladas Recipe & Easy Clean-Up

Over the holiday weekend we spent a lot of time eating, as I'm sure so did the rest of the country. It's really everyone's favorite thing to do when we get together and it's a time to prepare some of our favorites. But the last thing anyone wants to do, especially during a holiday or anytime really, is clean up. Over the weekend I made some mole enchiladas, a favorite. Mole is delicious, but it does leave quite a mess behind, and the baking pan is especially dirty and will need to be scrubbed right away so it won't get even more dried and stuck on with food. This recipe for Enchiladas de Mole is one of our favorites and it really doesn't require a lot of ingredients or time, but it's super tasty and it's a recipe we always enjoy eating because it's basically just tortillas and cheese, two of our favorites!


Enchiladas de Mole
(serves 4)
16 tortillas 
1/2 cup of pre-made mole 
1 large onion diced
1 1/2 cups queso cotija
1/4 vegetable oil

Preparation:
Dice onion and break up cotija cheese and place into a container. Pour oil into pan until hot. Take each tortilla and slowly dip into oil to fry them lightly. After the tortilla is lightly fried, place into a plate that has the mole and cover both sides. Fill with cheese and onion mixture and place into baking dish. Do the same until you have finished all of the tortillas and top with more cheese and onion mixture. Bake at 350° for about 30 minutes. Serve warm.
