A Very Berry (Protein Packed) Kid Friendly Smoothie Bowl

It's a common misconception that tofu is only used in Asian-inspired dishes, or that it can only be used in soups. It's a lot more versatile than you might think. Silken tofu can be used in desserts, main dishes, appetizers, and can be a substitute for dairy ingredients.

Another misconception is that tofu is only for vegans or vegetarians to enjoy, but that is simply not true. I for one, have really grown to enjoy tofu since first trying it about two years ago. My favorite way to enjoy tofu is in a veggie stir fry, which only takes minutes to cook, but this is just one of the ways that we enjoy it.

I even add some spinach for extra measure, which is not something they normally enjoy.

Very Berry (Protein Packed) Kid Friendly Smoothie Bowl
2-3 small servings

smoothie:
1/3 block of Mori-Nu Silken Tofu Lite Firm
½ cup of fresh baby spinach
½ cup of frozen berries
2 bananas
topping:
fresh berries
granola


Instructions:
Place all the smoothie ingredients in a blender and blend until smooth. Pour smoothie into bowls and add toppings. For toppings I chose fresh sliced strawberries, blueberries, a handful of granola mix and a drizzle of honey.



Because this is a kid-friendly recipe I usually allow the kids to get in on the action by topping their own smoothie bowls. This is a fun way to let them help create their own snack and it lets their creative minds take ahold. You can prepare a little toppings bar with all their favorites including: sliced bananas, strawberries, mandarins, apples, etc. There are so many possibilities!
