End of Summer Strangewiches

It's the end of summer vacation for the kids, literally, they go back to school tomorrow. Before heading back we've been trying to take advantage of every last moment of freedom before the back-to-school grind begins once again. A great way to spend quality time with the kids is by preparing lunch together. Kids love pitching in in the kitchen and this way we get savor a few extra moments together doing something we both enjoy, eating.


Today Sammy and I made two really good Strangewiches. We made a Grilled Cheese and Blueberries Strangewich with fresh blueberries for her, and an Avocado & Sriracha Strangewich with sriracha sauce and fresh avocado for me. 



INGREDIENTS

  • 1/2 cup fresh blueberries
  • 1/2 tsp. granulated sugar
  • 1 Tbsp. Hellmann's® or Best Foods® Real Mayonnaise
  • 2 slices of whole grain or sourdough bread
  • 2 ounces sliced Gruyere cheese

DIRECTIONS

  1. Toss blueberries with sugar in small saucepan and cook over medium-high heat, mashing occasionally with a fork, until slightly thickened, about 5 minutes. Set aside.
  2. Evenly top 1 bread slicewith cheese, then blueberry mixture. Top with remaining bread slice. Spread outside of sandwiches evenly with Hellmann's® or Best Foods® Real Mayonnaise.
  3. Cook sandwiches in large nonstick skillet over medium heat, turning once, until golden brown and cheese is melted, about 5 minutes.

HACK for perfectly crips results: put mayo on the outside of the bread instead of butter for grilling


 Fresh blueberries, YUM!!



So good, this one is a definite hit for kids.


Next we put together the Avocado & Sriracha Strangewich which is delicious!




INGREDIENTS

  • 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
  • 1 tsp. Sriracha sauce
  • 2 slices whole grain bread or pumpernickel bread, toasted if desired
  • 1 avocado, sliced

DIRECTIONS

  1. Combine Hellmann's® or Best Foods® Real Mayonnaise with Sriracha in small bowl. Spread evenly on bread.
  2. Top evenly with avocado. Garnish as desired.


The sriracha sauce and Best Foods® mix gives this Strangewich a delicious and spicy kick. You can make this in just minutes, which leads me to believe that this will become a go-to meal for me on those busy school days.
