Celebrate the Holidays w/ Pozole Rojo

There's really nothing quite like sitting down to enjoy a homemade meal with those you love around you. The holiday break really allows all of us to catch up and relax after that really hectic fall and back-to-school season. We started the holiday break by taking a week off to visit Las Vegas and now we are home for the next two weeks just relaxing and enjoying this time together. Though Christmas has now passed we are still celebrating the holidays. We celebrate until January 6th, El Dia De Los Reyes, which still gives us plenty of time to enjoy together. 


Of course, one of the best things about being at home for the holidays is getting to eat meal after delicious meal. One of our favorites of all time has to be Pozole made with carne de puerco. Even my little Sammy, who can be quite the picky eater, loves a nice warm bowl of Pozole with extra hominy. That was and still is my favorite part of Pozole, the hominy or maiz


Traditional dishes like tamales, pozole and menudo are always at our table during the holidays because they are part of our heritage. We love turkey and ham, stuffing and all of those other dishes too, but there is something to be said about eating a dish that you have been enjoying since you were a child, in Mexico. Those dishes are just special and the most delicious. 



Pozole Rojo w/ Pork Meat
(serves 4)

Ingredients: 
1 can of hominy
1 lb pork meat (lomo), cubes
3 cups of water
1 onion
4 garlic cloves
2 cubes Knorr Tomato Bullion
1/2 tbsp of oregano
1/2 tsp ground cumin
1 tbsp of oil
4 chiles guajillo


Directions:
1. Place water into a medium pot and add 1/2 an onion, 2 cloves of garlic and the meat. Cook for around 30 minutes. 
2. Add hominy and 2 cubes of Knorr Tomato Bullion and cook for another 30 minutes while you prepare the sauce.
3. In a separate small pot, place deveined chiles guajillos to cook in water for 5 minutes. When they are soft, place into blender along with 1/4 of an onion, oregano, cumin and blend until smooth. 
4. Now in a medium sauce pan place 1tbsp of oil and allow to heat. Once oil is ready pour blender contents in using a strainer and heat for 5 minutes. 
5. The last step is to pour the sauce into the pot and cook for at least 10 more minutes. 


Serve hot and garnish with: chopped onions, limes, shredded cabbage and radishes, for best flavor. 


I add a ton of lime juice and chopped onions to my bowl and pair it with a tostada. This was so good that everyone wants me to make another pot. I guess I will be picking up more pork meat tomorrow at Northgate Market and getting ready for a second day of delicious Pozole! Not exactly a hardship.
