When I attended the Walmart Neighborhood Market opening in Jurupa Valley last week, I was completely surprised and delighted by the produce selection in the store. It was the one area of the store that I was most interested in checking out because I try to incorporate as many fruit and veggies into our meals as possible. Having a good selection of fresh produce as well as fresh fruits is important. There is nothing worse than having to make a separate run for these goods to a farmers market when I am already running so low on time. I really found the selection to be excellent and the prices to be very competitive.
I grabbed a little bit of everything: squash, carrots, broccoli, bell peppers, lemons, cucumbers,
beets and tomatoes.
The produce section at the new Walmart Neighborhood Market is like a rainbow.
After grabbing my produce and fruits I made sure to grab a bottle of olive oil, which I use on almost everything.
On Sunday I pulled out the fresh veggies and put together a very fast green salad with an olive oil & lemon dressing that is really light and low in calories. My girls of course prefer this salad with ranch but I try to make this lighter version whenever I can.
Olive Oil & Lemon Salad Dressing
1/2 cup lemon juice
1/2 cup extra virgin olive oil
2 minced garlic cloves
1 tablespoon salt
1 tablespoon pepper
To prepare just mix all of the ingredients and pour over salad
You can make this salad using all of your favorite veggies. It's so easy to make it hardly requires any work at all. I washed all the veggies and sat down at the table with a cutting board and a big bowl to put everything in. I watched Jack make pork chops and beans as I prepared the salad, all while enjoying a cold glass of sweet tea. It was fresh, crisp and refreshing and a perfect accompaniment to the delicious pork chops Jakie made.
Because of the low Walmart Neighborhood Market prices, I have plenty more produce for the week and when I need more I can make a quick run to grab some. The store is going to be rolling out different weekly sales, so it will be fun to drop in and see what great deals I can score.
